Chef Stephan Pyles Lends His Culinary Talents to Fireside Pies

Starting Sept. 17, Fireside Pies will be debuting a new special menu thanks to a collaboration with award-winning Dallas chef Stephan Pyles. “Fireside by Pyles” is a one-of-a-kind culinary journey featuring seasonal dishes inspired by Chef Pyles’ global travels.

“I’ve been friends with Mark Parmalee, the owner of Fireside Pies, for more than 25 years, and it has always been a dream of ours to work together,” Chef Pyles shared. “Mark suggested that I collaborate with his resident culinary genius, Joe Bozarth, to see if we could come up with some truly special and innovative dishes to share with Fireside Pies’ guests.”

Chef Pyles began his career at The Great Chefs of France Cooking School at the Mondavi Winery where he worked alongside several Michelin-starred chefs. He has written four cookbooks, hosted the Emmy-award winning PBS series “New Tastes From Texas,” cooked for six U.S. Presidents, seven First Ladies, and has won multiple James Beard awards. He created 22 restaurants over the past 30 years, including Dallas’ Flora Street Café and Stampede 66 in Allen.

“It’s been the experience of a lifetime to work side-by-side in the kitchen with Chef Pyles,” shared Fireside Pies’ Joe Bozarth. “Fireside Pies is well-known for its cozy atmosphere, rustic cooking and handcrafted cocktails, but it’s often mislabled as a pizza joint. ‘Fireside by Pyles’ will help broaden our appeal by showcasing a wide array of international cuisine, while staying true to our brand.”

The “Fireside by Pyles” menu will include a smoked tomato gazpacho, shrimp ceviche, chipotle short ribs with pappardelle noodles, Oaxacan clayuda, chocolate bacon bourbon cake, among other exciting new dishes. Pyles helped create a Vietnamese pizza as well as a cauliflower crust available on any Fireside Pie.

The special menu will be available beginning Sept. 17 at the Inwood location, Sept. 23 at the Lakewood location, Sept. 24 at the Plano location, Sept. 30 at the Grapevine location, and Oct. 1 at the Fort Worth location.
