Popular hot chicken chain Mike's Chicken and fast-casual rotisserie eatery Cowboy Chicken are under construction in Plano, with opening dates TBD.

The chicken trend is showing no signs of slowing down, with a Mike’s Chicken and Cowboy Chicken location both under construction now.

Mike’s Chicken is working on a location at the corner of Renner Road and State Highway 190, Local Profile first reported.

The restaurant serves tenders, legs, thighs, breasts, wings, sandwiches, salads, traditional fried-chicken sides and six sauce options.

Cowboy Chicken also recently signed a lease at 8245 Preston Road, fast-casual magazine QSR first reported.

“We’re thrilled to continue our partnership with Vesta Restaurant Group to open the new Cowboy Chicken in Plano,” says Sean Kennedy, president and CEO of Cowboy Chicken. “The city’s energy, family-oriented values and strong sense of community align perfectly with our brand, and we’re looking forward to strengthening our connection to guests there.”

The restaurant is scheduled to open in the fall, according to a news release.

The fast-casual chain served rotisserie chicken, tenders and wings, brisket, salads and other southern favorites.
