Blue Goose Million Dollar Renovation

The Blue Goose Cantina located at 4757 W. Park Blvd. in Plano recently closed for an extensive remodel and renovation. The new and improved restaurant is expected to re-open this summer.

Matthew Frank, general manager of the Plano location, said the Plano location hadn’t changed much since opening in an existing building in late 1999. The Blue Goose team has been talking about a remodel since 2014 and knew it was finally time.

“We didn’t want to be stuck in the ’80s forever,” he joked. After much consideration, the board of directors voted to embark on a renovation project with the help of Dallas restaurant design company, The Guest Group, to the tune of a over a million dollars.

The plans for the big renovation include gutting much of the building, knocking down walls, adding a new U-shaped bar and making cosmetic changes that include new tile work, cedar beams, neon signs and updated tabletops using reclaimed wood.

Additionally, Blue Goose plans to build a new patio area with glass garage doors that can open during good weather and close when rainy or cold. A traditional, open-air patio will also be constructed on the opposite side of the entrance. A new entrance vestibule will be constructed using lots of glass for an overall brighter look.

Upon reopening, the number one goal is to continue providing excellent service, according to Matthew. The best training staff from the six currently open locations will be brought in to train new and returning staff members as if it’s a brand new restaurant. “Service is the name of the game,”said Matthew. “We want to give great experiences to people.”

This remodel will be the prototype for the other Blue Goose locations. Once the Plano location is complete, and a new Fort Worth location opens in the fall, the company plans to roll out renovations in the same style for the remaining six locations.

Although Matthew noted the increase of more upscale Mexican eateries popping up in town in recent years, he said the renovation isn’t meant to compete with that look. The restaurant will still be bright and colorful. “The Goose is not stuffy,” said Matthew. “We’re fun.”
