Sixty Vines Begins 60-Day Partnership with Winemaker, Offers ‘Exploratory Tap’

For 60 days, Sixty Vines is partnering with an organic winemaker to educate guests and serve exclusive wines.

The restaurant will feature Tablas Creek Vineyard, its winemaker Jason Haas, and its viticulturist, Jordan Lonborg, as part of the “Every Tap Has a Story” campaign. Tablas Creek has been certified organic since 2003, and it emphasizes on producing quality wines through dry farming and moderate crop levels. Using a herd of sheep, “Paco” the alpaca and two Spanish Mastiff guard dogs — Audelita and Bjorn — the winery rarely requires outside supplies to make wine.

Sixty Vines is also offering an “exploratory tap,” serving wines made exclusively for the restaurant. Diners will receive postcards highlighting Tablas Creek, and toward the end of the 60 days, there will be an in-person wine pairing event with a Tablas winemaker who will teach about Tablas’ wines and sustainability processes.

Tablas Creek was founded in 1989 in Paso Robles, California, an area that has many similarities to the southern Rhone Valley. The vineyard makes 15-20 wines each year.
