Allumette Café Coming to Downtown Plano

Allumette Café is expected to open this June in the Downtown Plano Arts District, according to chef/owner James Coulter. James is a current Plano resident with a 25-year history in the food business, working previously as a chef to the Philadelphia Eagles (don’t worry, he’s a Cowboy fan) and for the past five years as a Le Cordon Bleu instructor.

When Le Cordon Bleu announced in late 2015 that it would be closing all of its U.S. campuses, James decided to act on a dream he had of owning his own eatery. He will be opening the café with partner Jennifer Berryhill, a prior student of his.

Allumette Café will serve artisan-crafted sandwiches, salads, soups and entrées, with an emphasis on healthy, organic ingredients. While the word “artisan” gets thrown around a lot in the food industry, he assures us that his team will be making their own sauces and dressings, roasting their own meats and curing their own bacon. Eventually James plans for the eatery to serve Sunday brunch, as well as a full bar with mimosas, bloody marys, beer and wine.

    This sounds great! I hope they will do a few offerings that are Wheat Belly compliant (which would also be compliant with Paleo/Primal and other ways of eating).
