Fish City Grill and Half Shells named Molly Winkler as their Executive Chef.
After completing her education at The International Culinary School at the Art Institute of Dallas, Winkler gained culinary experience at many different restaurants. Starting as a sous chef at Walt Disney World, True Food Kitchen and Sixty Vines, Winkler worked her way up to Executive Chef in restaurants such as TJ’s Seafood and Corporate Chef for Lombardi Family Concepts.
“I have long admired the culture of friendliness and excellence that Bill & Lovett Bayne have built with Fish City Grill,” Winkler said. “I am proud to be a part of the evolution of the Fish City Grill and Half Shells brands as they enter their next decade. I know we’ll continue to exceed the standards of our regular customers and introduce Fish City Grill to a whole new generation of diners across the region.”
The Fish City Grill brand has recently evolved to feature a new, lighter interior design with a seaside motif. This can be seen in the furniture and artwork, as well as a new color palette. Updating the patios to make them cozier and friendlier has also received attention. Bill Bayne, co-founder of Fish City Grill and Half Shells, views Molly’s choice as a component of a larger brand plan.
“We decided to bring in an accomplished Executive Chef to lead our culinary direction,” Bayne said. “As we seek to stay relevant with our current Customer base, we also want to be able to appeal to a younger but still mature demographic by offering newer menu and chalkboard items that are on trend, fresh and unique. Molly will be a key leader in ensuring our brand’s relevance by enhancing our menu, our culinary execution and seafood expertise.”
Neighborhood seafood restaurants Fish City Grills and Half Shells offer excellent seafood and beverages in a relaxed, welcoming atmosphere. There are currently 23 Fish City Grill and Half Shells locations in Texas, Arkansas, Florida, and Oklahoma, with more to follow.
